ROOH CHICAGO

ROOH is a progressive Indian restaurant and cocktail bar nestled in the heart of the city’s West Loop neighborhood. Meaning soul or spirit, ROOH brings the spirit of India to Chicago through the restaurant experience by way of relaxed communal dining and world-renowned cuisine from Executive Chef Sujan Sarkar. The vibrant and modern restaurant design provides a quintessential platform for Chef Sarkar’s cuisine, mixing traditional Indian flavors with modern gastronomic techniques and local Chicago ingredients.

EXECUTIVE CHEF, SUJAN SARKAR

Championing progressive cooking deeply rooted in tradition, Chef Sujan was an early adopter of the farm to table movement and his experiments with decades-old recipes have led to the birth of ambitious projects like Ek Bar — India's first Artisanal Cocktail Concept.

Sujan's food has been enjoyed in restaurants around the world, including the Michelin-starred 'Galvin at Windows' at London Park Lane. He has also was at the help of hotspot 'Automat and Almada' in London and Olive Bar & Kitchen in New Delhi. These global experiences have helped inspire Sujan's distinctive culinary style.

CHEF DE CUISINE, SAHIL SETHI

His love for food and feeding people started at a very young age through community service at temples in India. This turned into his passion and later his career. Sahil’s philosopy is less is more and to simply cook from the heart. “Source locally and cook with seasonal produce and respect the ingredients.”

Chef Sahil’s career has taken him to some of the best institutions in the world including 2 Michelin star NOMA in Copenhagen, St Regis in Abu Dhabi, Westin Hotels and resorts and Olive Bar & Kitchen in New Delhi.

Manish Mallick, OWNER

Manish is heading operations at ROOH Chicago. One of Manish’s biggest passions has been meeting new people and forming meaningful connections. The hospitality industry let’s him do just that everyday. He wanted to change the perception of Indian cuisine by bringing a progressive, artful and vibrant Indian concept to Chicago.

He spent most of his career in marketing, finance and technology. He has a successful track record of driving operational efficiencies in the automotive, finance & legal industries using Cloud based technologies. He has made significant contributions working for some of the icons of US economy, namely, General Motors, JP Morgan Chase & Hewlett Packard Enterprise.

RINA MALLICK, OWNER

Rina has always had a love of food, travel and travel photography which has played a big role in Manish and Rina’s interest in the culinary scene and the hospitality industry.

Rina currently works in the advertising space as a Group Creative Director specializing in digital and social media.

She has worked across many verticals on large clients including Jeep, Lincoln, Sprint, Nissan, Johnson & Johnson, Asics, Depaul University, and more.
